The chef behind Mayfair’s IGNI, Theo built his reputation over more than a decade at some of London’s most celebrated tables, winning or retaining Michelin stars at Bonhams and Portland, before earning a Michelin star at Cycene within just five months. At IGNI, he cooks entirely over fire, drawing on his Brighton upbringing and a lifelong instinct for seasonal, produce-led food. He brings that same craft and character to the Estate for one night only.
